Since its arrival in 1994, Castel has deployed considerable technical and human resources to obtain quality wines from the Meknès region.

Technique:
The Castel Meknès site is one of the most high-performance sites in Morocco.
This brand new centre contains:
- 87 heat-regulated stainless steel fermentation vats equipped with programmable pumps with a capacity of 670 ho
- 2 testing hoppers, each 70 ho/h
- 2 pneumatic presses
- 2 harvesting heat exchangers
- 2 cold generators totalling 1 million frigories (units of cold), enabling complete fermentation control
- 12 blending and storage vats, each 2000 hl
- One mobile bottling truck made in France with a capacity of 1500 bottles/hour with a rinser, filters, bottler and adhesive labeller.

Human resources:
The level of human resources deployed is in line with the significant technical investments made. Nearly 350 people are employed year-round and this figure can reach 900 during harvesting time.
A large number of technicians (oenologists, engineers etc.), both French and Moroccan, supported by a team trained in every step of the winemaking process, contributes to the making of quality wines under the leadership of Olivier Spillebout, a French oenologist in charge of quality and Halana winemaking.
